Easy Peasy Ginger Beer

Ginger beer is one of my favourite things in the world, especially good in the summer when it's getting hot. The classic real ginger beers are fantastic but slow to make, so here's my shortcut for getting amazing results in hardly any time.

INGREDIENTS

  1. 140g fresh ginger
  2. 4 tablespoons muscovado sugar
  3. 2–3 lemons
  4. 1 litre soda water or sparkling mineral water
  5. Ice cubes
  6. Sprigs of fresh mint

EQUIPMENT

  1. Box grater
  2. Bowl
  3. Speed peeler
  4. Pestle or rolling pin
  5. Sieve
  6. A large jug

PREPARATION

1. Coarsely grate the ginger, leaving the skin on if you like. Put the ginger with its pulpy juice into a bowl and sprinkle in the muscovado sugar.

2. Using a speed peeler, remove the rind from 2 of the lemons. Add to the bowl and bash slightly with a pestle or a rolling-pin to mix up all the flavours.

3. Squeeze the juice from all 3 lemons and add most of it to the bowl. Pour in the fizzy water or soda water and allow to sit for 10 minutes and then have a taste. If it tastes too sour, add a little more sugar or if slightly too sweet, add a little more lemon juice to balance it out.

4. Place a sieve over a large jug and pour in the ginger beer, discarding any left over bits in the sieve. Add lots of ice and some sprigs of mint to serve.
